Raising Agents
Abstract
A leavening agent is a material that, when combined with: Liquid, Acid, or Heat, Releases gas and causes dough to expand. Leavening agents are also known as rising agents that might include food ingredients like: Whipped egg whites or cream, Active or instant dried yeast, Baking soda or powder. These agents give baked good their ideal volume, texture, and crumb.
