Charcuterie
Abstract
Charcuterie is derived from the French word meaning ‘cooked flesh’. Over the years, as trade and business developed across the globe, food habits and tastes also changed as a result of influences, new ingredients, etc. For instance certain special items, such as cheese and smoked cold meats, became cherished delicacies that got traded for goods. It thus, became necessary to evolve certain standards on preparation of these dishes and codification of rules on the sale and purchase of such food items to control the money and price abuses.
